Last night my mission for supper was to re-create a Chipotle Burritos Bowl…only one small problem remained – I have never actually been to Chipotle! But I have read about it all over the blog world and had a good idea how to re-create the bowls for me and Chad and in no time at all I served up the bowls:
Absolutely delicious! And very filling. Now I cannot speak on how they matched up to a real Chipotle bowl but they still hit a 10 on our scale. However, in a few short days we plan to hit up a Chipotle for the real test!
There was nothing hard about this dish, just tossing together a few different items and layering them in a bowl. No matter how it stands up against the real thing these bowls will be made many more times in our house. I know there are many recipes around on people’s versions of these burrito bowls but seeing as I winged in I am going to share mine. Ready?!
Mock Chipotle Quinoa Burrito Bowl
Serves 2
3/4 cup dry quinoa
2 cups water
8T lime juice
1 large skinless,boneless chicken breast thawed
3T extra virgin olive oil
3T chili powder
2 garlic cloves – minced
3/4 cup black beans
1/2 red pepper – chopped
1/2 frozen corn kernels
1 avocado – mashed
Guacamole spices (I used the Epicure blend)
1 cup cherry tomatoes – chopped
2-3 green onions – chopped
Salsa spices (I used the Epicure blend)
Cilantro – to taste
1/2 shredded marble cheese
Marinate the chicken for a few hours or more in the 3T lime juice, evoo, 2T chili powder and 1 garlic clove. Preheat the oven to 400. Spray a dish with non-stick spray, place marinated chicken in dish and into oven, set timer for 20-25 minutes depending on your chicken thickness and size.
Meanwhile, combine dry qunioa, water and 3T lime juice in a medium pot and bring to a bowl. Once boiling, turn to low-medium and place lid on – be careful not to over boil – and cook for about 16-18 minutes or until all liquid is gone.
Combine mashed avocado, 1T lime juice, and guacamole spices in a bowl and set into fridge. For the salsa – combine the cherry tomatoes, green onions, 1T garlic clove minced, cilantro, 1T lime juice, mix and put into the fridge.
In a smaller pan add non-stick spray, the black beans, corn and red peppers, on medium heat – mix till heated and add 1T chili powder, turn heat to low and stir to prevent sticking.
Once chicken in cooked, take from oven and cut into chunks or strips. Remove quinoa from heat and stir in cilantro.
Layer the quinoa-chicken-bean mixture-cheese- salsa-guacamole. Enjoy!

Las night we went to the lounge at the Scotties to listen to a band called the Chevelles, who play basically anything but mainly cover songs from the 50’s-80’s, but they also rocked Poker Face! They were awesome and I am glad we made the cold and snowy trek out. Just before midnight we called it a night and headed home to bed.
This morning we did the typical Sunday morning routine – gym (6km run, upper body weights for 30 minutes) and brunch. Brunch today was pancakes with a peanut butter swirl:

I got the swirl idea from Angela at Oh She Glows and mixed together 2T of peanut butter with 1T applesauce. I loved the addition to our pancakes! But then again when do I not love peanut butter? I topped mine with plain Greek yogurt, berries and saskatoon berry syrup:

On the side coffee, Kicking Horse with almond milk and a shot of vanilla syrup and FOAM! Another at home “re-create”. I finally caved in and bought a milk frother from Epicure and already love it to pieces. Check out the foam action:

Here is the rest of our day: shower/get ready, clean kitchen, put away laundry, and go to Scotties – it is the LAST day!! Where did the past 2 weeks go? It was a lot of fun but I am more than ready to get my life back. This afternoon/evening we have to do take down but am hoping to make it home in time to watch the Oscars :)
