Pizza & Pancakes

First off does everyone know it is National Pancake Week?! Might just be a US thing but I am still celebrating it :) Because I totally knew this last week when I meal planned, I made sure to incorporate pancakes into the plan. Okay that is a lie, but by a complete fluke they were the planned breakfast this morning.

Backing up to last night, after work we rushed home to make a quick supper before heading off to the tournament for a shift. Now this supper may have been quick and was not healthy but Chad had been waiting for at least a month for this:

Yes, a frozen Delissio pizza, much to my demise. But this wasn’t any old frozen pizza, it was the garlic bread pizza…haha. Chad begged for it in the grocery back about a month ago and I only gave in because it was $5 and I knew it would be a quick supper one night.

I had a couple pieces with a huge side salad, and I also added more veggies to the pizza. And to be honest, it was pretty good. Not too greasy and it already had red and green peppers, mushrooms and onions – but don’t tell Chad I admitted that ;)

After our shift at the tournament (it was a short one) we headed to the pool in hopes the hot tub would be open and we could get in some relaxing before our laps. But no luck and it was still closed for maintenance. So instead we hit the sauna and then got in our 10 laps. It went okay, but I really need to learn how to put my head in the water and breathe right. I keep choking on water and then have to stop mid lap. My hopes is that after our holidays I will work on this more.

Now back to the pancakes, this morning I whipped up a batch of Tina’s (Carrots ‘n’ Cake) protein pancakes for me and Chad. I topped mine with vanilla Greek yogurt, peanut butter and chopped strawberries.

Soo good! I could eat these every day!

Oh, and last night we realized our furnace was blowing out cold air…fun times I tell you. February has been a interesting month so far. We have a service call in so that we can make sure it is looked after before we leave in 6 days!

Since I did my post earlier yesterday I feel like I am behind there is so much to catch up on, but to keep it short and simple here was tonight in a nutshell – gym – ran 8km and did this ab routine, which was killer), supper was a frittata – a spin off from this recipe from Skinny Taste, but I used parmesan cheese, turkey sausage, spinach and broccoli and now it is time to relax and catch up on last night’s Glee episode.

Have you celebrated National Pancake Week?

Not going to lie I am VERY tempted to celebrate one more time, maybe with peanut butter and jam pancakes? I have this vision of using pb&j to swirl through the batter… hmm…
